Big Pots and a Gong: Communal Meals

Martin Planchaud France
A native of Tours, Martin Planchaud began his career in the kitchen working in various Bordeaux restaurants. Keen to broaden his experience and learn new ways of cooking from inspiring chefs, he travelled to Canada and then Paris. His passion for tradition and experimentation led him on a quest for movement. Along the way, he came across the Domaine de Boisbuchet design residence, and subsequently decided to dedicate himself to places combining cuisine, art and design. He likes to think of the kitchen as a playground and meeting place for designers. He has made several collaborations with culinary designers. After several inspiring trips lasting several months, during which he had to adapt to different cultures, notably in Mexico, India and Italy, he went to New York to try out several positions as a chef. He continued this experience in the restaurant business in the Basque country. The Domaine de Boisbuchet will remain an annual event that allows him to inject new energy, expand his network and consolidate his collaborations.
Although based in Rome, he nonetheless chooses to remain on the move in order to continue discovering new ways of conceiving his medium. This allows him to remain committed to the quality of his choice of products, and to adapt to seasonal variations in a consistent manner. Martin Planchaud sees himself as a culinary craftsman who places at the center of his cooking an attachment to the taste and visual aspect of the dishes he proposes.

The Workshop
Throughout history, shared meals have been a cornerstone of human being. From ancient feasts that celebrated harvests to communal tables providing food for people in need, the act of gathering around food has always transcended sustenance, nurturing bonds and traditions, and has continuously challenged creativity. These shared experiences remind us that food is not just fuel for the body, but also for the mind and spirit—a way to communicate, celebrate, and create together.
What does it take to bring people together around food—particularly in a rural and remote setting like Boisbuchet? This workshop invites participants to step into the art of feeding a community, exploring the transformative experience of creating and sharing meals as a group. At Boisbuchet, where creativity thrives amidst nature, cooking becomes a practice of both nourishment and imagination.
Guided by the tutor’s large experience—over five years of leading Boisbuchet’s kitchen and feeding countless creative minds—participants will dive into a practical and esthetical experience of communal cooking. They’ll uncover the stories behind the ingredients, connect with the dynamic network of local producers who supply Boisbuchet each summer, and immerse themselves in the land through foraging and sustainable practices. From learning to plan menus and adapt recipes to designing meals that minimize waste, this workshop will inspire participants to view food as a tool for creativity and care.
The week will evolve into a hands-on, collaborative experience, blending the practicalities of the kitchen with the distinctive atmosphere of Boisbuchet. Participants will not only prepare meals but also craft the tools and objects essential to their shared culinary experience. Traditional heat production, improvisation, and the joy of gathering will culminate in a grand communal dinner, held in one of the Domaine’s most special settings, which will bring together all the skills and insights gained throughout the week.
